Her cinnamon roll recipe is one of the best examples of her out-of-the-box thinking when it comes to this culinary art form.

The Low Carb / Keto Cinnamon Roll Recipe

I so do love you KETO cinnamon roll...shr 2555 2 Oh how you have become my favorite go to when I want dessert but, a
healthy dessert. Heck!!! You're so awesome I honestly don't see why I'd
eat a flour and sugar filled version of you when I can eat one with
@questnutrition vanilla protein, almond flour, eggs, cinnamon and cream
cheese.

Recipe:
- KETO CINNAMON ROLLS -
•7 cups mozzarella cheese
•7 tablespoons cream cheese
•3 eggs
•3 scoops Quest Nutrition vanilla protein powder
•2 tsp baking powder
•1 tbs Vanilla extract or @heilalavanilla vanilla bean paste
•5 cups almond flour blanched
•1/2 cup erythritol

Cinnamon Filling:
5 tbs erythritol (or, 1/2 tsp sucralose)
3-5 teaspoons cinnamon (depending on how cinnamony you like it ??
3 tbs butter or, heavy whipping cream
.
Icing:
•1/2 cup cream cheese
•3 tbs erythritol or, 1/4 tsp pure sucralose
•3 tbs heavy cream or, coconut cream or, 2 tbs unsweetened almond milk
.
Mix the cream cheese and mozzarella together into a microwave safe bowl shr 2555 3 on high heat 30 seconds at a time...
Should take up to 2-3 minutes to do.
Next once melted mix in the almond flour, sweetener and eggs...
Mix very well... BY HAND or by fork, doesn't need to be well
incorporated... you will see almond flour and things not well mixed in.
Just make sure all the dry items are pulled in and folded in the
mixture.
Then place on parchment paper and place another piece of parchment on
top and roll out with a rolling pin. The goal is a rectangle shape (in
order to get as many cut rolls as possible) but don't stress it will
work even if it's a circle or oddly shaped.
Once dough is rolled out place in oven at 350 degrees for about 5-7
minutes.
Take out and let cool for a 2-3 minutes... then add the cinnamon mixture
and spread out as evenly as possible leaving a small edge of dough
showing on the sides.
Now ROLL!!! Roll the beauty up nice and easy? once rolled start at one
end and cut approx 2 inch lengths and place on baking tray with high
sides (not a cookie sheet).
Bake at 350 for 7-12 minutes. Till slightly golden brown and some edges
have browned.
Add the icing when you're ready to serve.
