[00:15:36] Dr Stephan talks about using metabolomic technology for his study.

- We used metabolomic approaches to peel back the onion layer, in this case, a popular plant-based meat alternative and grass-fed beef.
- We chose grass fed beef and the plant-based meat alternative because they are in the same price category and both being marketed as healthier, more sustainable, alternatives.
- Findings - 90% difference in metabolite abundance, they are not nutritionally interchangeable.

- In another study we compared grass fed and grain fed beef.
- We profiled 600 compounds and found that 380 of those 600 compounds were different between grass fed and grain fed beef.
- Major differences in some of the antioxidants, plant secondary metabolites, vitamin, and mineral derivatives, in certain amino acids and even in saturated fatty acids
- Long chain saturated fatty acids were enriched in grass fed beef.
- Higher advanced glycation end products in grain fed beef.

[01:08:30] Talk about how you do things at White Oak Pastures.
- Sixth generation farm established in 1866. Back in 1995.
- In 1995 Will Harris was the owner of White Oak Pastures and up to that point was more of a conventional monocultural farmer.
- He was having a tough time watching his animals get shipped off to some far away processing plant.
- He knew it was stressing the animals.
- He made a series of radical changes and go back to farming the way it was done 150 years ago.
- Managed herds and grazing methodologies properly.
- We are primarily known for grass fed beef, but we are becoming increasingly known for other ruminants that we have on the farm.
- We have started raising animals on the farm that complement one another when it comes to the cycles of nature, which eliminates the need for antibiotics.
- Basically, working with the cycles of nature as the maker of nature intended and allowing the animals to freely do everything that would come naturally.
- We found in a soil that because of the way we are raising our animals and managing the land, that carbon is being safely sequestered and stored in the soil by the ton, as opposed to being released up into the atmosphere.
